NOVEMBER 2016 - Black Bean Salsa
Ingredients:
• 1 can of cooked black beans
• 1/4 cup diced red onion
• 1/2 cup of frozen corn (thawed)
• 1 medium tomato diced
• 1/3 cup chopped fresh cilantro
Preparation:
• Drain and rinse the canned beans.
• Mix all ingredients together in a large bowl.
• Sir well.
• Place in refrigerator for 30 minutes or longer.
This salsa is great over grilled fish, chicken or turkey breast.
