Great Recipes & Eating Real Food
The phrase “healthy eating,” often conjures up images of dry, bland, and lifeless foods. It’s no wonder, then, that so many people fail on their journey to health because let’s face it, can you imagine eating dry tuna, plain rice, and boring broccoli day after day? You’d maybe succeed eating this way for about three days before you threw up your hands and said, “Forget this!”
Here at IEM, we know that healthy eating doesn’t have to mean boring and tasteless. We realize that eating is an experience and that in order for a person to feel satisfied, a combination of flavors, textures, colors, and moistures is necessary at each meal. When a client can consistently satisfy his palate along with his hunger, he is more likely to stay consistent with his eating habits and this will ultimately lead to adherence and consequently, success!

Lettuce Wraps
Ingredients:
• 2 Lbs. Ground turkey breast
• 2 Tsp. Carribean jerk seasoning or chinese 5 spice powder 5 tsp. Sugarfree apricot jelly
• 1 1/2 Tsp. Sesame oil
• 1 Can sliced water chestnuts, diced
• Salt and pepper to taste
• 1 Tsp. Red pepper flakes
• Lite soy sauce
• Shredded carrots
• Sesame seeds
• Puffed rice cakes
• Iceberg lettuce leaves
Preparation:
• Spray a skillet with nonstick cooking spray and preheat over medium heat.
• Brown the ground turkey breast with the jerk seasoning and sesame seed oil.
• Add the apricot jelly, salt, pepper, carrots, water chestnuts, sesame seeds and lite soy sauce and continue to cook for several minutes.
• Wash lettuce and dip each leaf in a bowl of ice water.
• Drain and pat each dry. Place large tablespoons of cooked turkey mixture onto each lettuce leaf.
• Break up the puffed rice cakes into crumbles and place over the lettuce wrap mixture.
• Wrap and serve.
• Serves 8
